andrea's rhubarb bread

hello!

I had so many of my wonderful friends share rhubarb recipes with me to try!  this one was from my old coworker's lovely wife who said this is one of her favorite breads.  i have to say it was so easy to make and super tasty!  it kinda reminded me of a sugared donut with rhubarb (which i LOVED).  i got to share this with my neighbor who gave me all the rhubarb in the first place and she said she couldn't stop eating it hehe.

andrea's rhubarb bread

2 1/2 cups flour

1 tsp baking soda

1 tsp salt

1 1/2 cups brown sugar

1 tsp vanilla

2/3 cups oil

1 egg

1 cup sour cream

1 T milk

1 T lemon juice

zest of half a lemon

2 cups thinly sliced rhubarb

1) stir all dry ingredients together and then all wet ingredients.  combine them together and then pour into 2 greased loaf pans lined with parchment paper and top with:

1/2 c. sugar

1/4 tsp saigon cinnamon

1 T butter

2) don't mix these ingredients together but not too much so there are bigger pieces.  divide between 2 loaf pans by placing on top of loaves.

3) bake at 325 F for ~ 60 mins or until tester comes out clean.
