roasted blackberry lavender ice cream floats

i am going to keep this short and sweet simply because.

i do want to say that i will be done with school for the rest of my life in t minus 20 days!  isn't that crazy?  i got a little sentimental about that walking to class the other day because i still get butterflies on the first day of every class just like i did when i was elementary, middle, high school and undergrad.  i will kinda miss that.  but in no time at all i will be dropping baby #1 off at his first day of kindergarten and im sure i will get the same feeling!!

 

blackberry lavender floats

for the simple syrup

3/4 cups sugar

1/2 cup water

1 t dried lavender flowers

1) combine all ingredients in a small saucepan until sugar is dissolved.  strain and cool completely.

for the blackberry puree

2 cups blackberries

1/4 cup sugar

a few fresh lavender flowers (optional--the simple syrup will give it enough lavender flavor)

1) combine all ingredients in an oven proof dish at 425 F for 15 mins.  remove flowers if using and puree with stick blender or leave it as is!

to make the floats

1) in a small glass cup add a couple spoons of puree, a small scoop of vanilla ice cream (i love breyers natural vanilla) a little bit of lavender simple syrup and a fill to the top with pure la croix or seltzer water.
