one of my go-to salads is this kale waldorf salad. my love affair all started when i got this from the whole foods salad bar...it was so amazing i had to make it myself so i could eat it anytime i wanted to. it's so good you think you should feel guilty about it, but you simply can't because this salad is jam packed with healthy thingies like kale, apples, dates and toasted walnuts. if you want to learn more about how healthy kale is for ya, you can take a look at this article.
i had a scare this week. i've had some issues following the birth of my son and the c-section. so i went in for an ultrasound (which was its own ordeal). baby boy of course went from sleeping great to waking up as soon as the tech started. so she's like 'well maybe you can hold him!' im thinking 'yeah right he'll know the boob is right there.' anyways. tried that, didn't work. i also forgot to have a full bladder for this, which i didn't because of course i was hurrying out the door (um, i have a 2 month old). so let's just say the tech had to do the ultrasound a little more invasively...so i had that going on and a baby on the boob (yay! motherhood! or story of my life?)
i get back into the room and the midwife comes to tell me they found something, '1 cm by 1 cm'...she's like 'we don't know what it is, but it could be a baby'. WHAT. so they were going to do some tests and i was told to come in again two days later.
that night, i anxiously awaited the phone call... i told dirt bike man it was all his fault for being good looking and that i wasn't ready for baby #2, BUT i should be faithful and walk in the path God has for me regardless. still i wasn't so sure and that's me being honest. though i want a lot of kids...so here we go, i guess?? the midwife never called. ahhh. -sigh-
then i started thinking well...i have been nauseous and i have been craving lots of meat (like i did with baby #1). oh gosh and i'm bloated. -.-;
so i go into the office for a second round of tests and they call me back into the room. 'the midwife will see you before i draw any more blood'. ok, here comes the news...why does she have to talk to me first?? so here i am googling 'pros and cons of having babies back to back' trying to get on board.
the midwife comes in...'sooo how's it goin'?' me: 'oh, gooood' (a lie).
'well, your tests were supposed to come back yesterday but came this morning so that's why i didn't call.'
me: 'ooh, that's ok...' >.>
'but you are not pregnant.'
the midwife laughed at the look on my face. i was relieved...but i would have been happy either way. though i am glad i get to enjoy baby #1 for a little while longer anyways.
kale waldorf salad
for the salad:
2 bunches of curly kale, finely sliced
1.5 - 2 apples, diced
1/3 c. raisins
5 celery stalks, sliced
1 c. toasted walnuts
for the dressing:
2.5 apples, diced
6 dried dates
1/4 c. raisins
1/2 c. olive oil
1/2 c. apple cider vinegar
1 T dijon mustard
1 1/2 t salt
1 c. toasted walnuts
1) blend all dressing ingredients in a blender until very smooth. taste and adjust seasonings to your liking.
2) toss dressing and salad ingredients together!
3) the end.
