this is part II of quick and healthy chinese! again i like to make these small sides together to put together a meal that can be prepped ahead of time and eaten straight from the fridge. i usually make rice, buckwheat noodles or sweet potato noodles to go with them all.
slippery wood ear mushroom with cilantro
adapted from Every Grain of Rice
1 handful of wood ear mushrooms about 1 1/2 cups after soaking
1 t minced garlic
1 T chopped cilantro
1 t sliced thai chilies (optional, but the best ever)
1/2 t rice vinegar
salt, to taste
1 t sesame oil
1) soak mushrooms in boiling water for 30 mins. rinse and shake dry.
2) combine all ingredients in a bowl with the mushrooms and adjust seasonings to your liking
