no measuring sheet pan dinner: how to cook sausage onions and peppers in the oven

ok!  i am dedicated to bring my most favorite people (you all who read my blog) some easy dinner idea or wholesome mom meals!!  today i'm going to teach you how to make sausage onions and peppers in the oven.  this is a recipe i learned from an awesome Italian chef I used to work for.

did you know you could have dinner on the table in like under an hour prep and cook time an all??  yeah girl.  you don't even have to measure anything.  no measuring??  yes, girl.

i've been working out a lot, lifting weights and such so i kinda wanted something high in fat (aka sausages, baby), but i would totally do this with chicken breast or thighs too.  here's the general method to follow:

Gather all ingredients.

Get your sausages, bell peps, jalapenos or anaheims, onions, potatoes and garlic.  Prep all these ingredients like you normally would by washing them or peeling off the skins or removing seeds etc.

Chop all ingredients to (roughly) the same size.

Is it really this easy?  Yup.  Dice the potatoes into large wedges, as well as the peppers and onions.  I really don't care how you do it, just make sure all the pieces are roughly the same size.

Season everything in a bowl with olive oil, salt, pepper and eyeball the spices.

Yup, not rocket science here, just use your best judgement.  Like you don't want two fistfuls of salt, but you can put several several pinches or like one pinch and it'll still be fine.  Same for the spices, use your best judgement.  Get yourself one of these stainless steel bowls.  You will not regret it.  I use it for literally everything (washing veggies, mixing dough, gathering tomatoes in the garden etc etc).  Throw everything into thebowl and give it a tossy-toss.

Roast at 400 F until it is done about 35-40 mins.

Then you put those sausage onions and peppers in the oven And you've got yourself a nice sheet pan dinner!

Sheet Pan Dinner Sausage Onion and Peppers

Serves 4 generously

6 raw Italian sausages, cut into thirds or 3 lbs boneless chicken thighs (or some of both!)

3 medium russet potatoes, peeled and cut into 4-6 wedges

6 anaheim peppers or 8 jalapenos, seed and cut into 3-4 pieces

3 bell peppers, red and green, cut into thick 1" strips

2 medium white onions, cut into quarters

6 garlic cloves, smashed

dry majoram

dry oregano

fresh basil or dried basil

good olive oil

salt and pepper

1) Toss all ingredients in a large bowl, add olive oil to lightly coat everything.  Add salt, pepper and spices.

2) Bake at 400 F until it looks right (nice and darkly browned) ~35-40 mins.  Use your best judgement you won't hurt it cooking it a little longer and getting it browner.

3) Serve with italian hoagies to soak up the all the good stuff!
