did you know there exists such a thing as rainbow boba?? uh huh. i'm not sure if i'll ever go back to buying the dark colored ones again.
this idea sprung from one of dirt bike man's kitchen experiments and our insatiable late-night sweet tooth. yeeeeeeah. we have those a lot. anyways!
well. dirt bike man mixed a batch of vanilla soy ice cream for me late one night (come on, say "awww!") and we were too impatient to let it freeze all the way sooo we made smoothies instead! and of course, i had to add my special touch which meant cooking up some rainbow boba that i had been saving for a rainy-day (and THAT day had come).
mmmmmm, and the layers are so fun to drink up. some of it is sweet and the other part is tart...AND THERE IS RAINBOW BOBA ALL IN BETWEEN!!!! <3 <3 <3 <3 <3 <3<3 <3 <3 <3 <3 <3<3 <3 <3 <3 <3 <3<3 <3 <3 <3 <3 <3

soy raspberry layered smoothie with rainbow boba
1 c. rainbow boba
2 T sugar
1 c. lightly sweetened soy milk
1 c. ice
1/2 c. coconut yogurt (or vanilla yogurt)
1 1/2 c. mixed berries
1/2 c. Trader Joe's Vanilla Soy Ice Cream
1 1/2 c. soy milk
1) bring water to a boil in a small sauce pot. add in boba and cook for 5 mins (or as directed on bag). drain off water and stir in sugar. set aside.
2) blend all ingredients in the white layer together. set aside in another container.
3) blend all ingredients in the berry layer together.
4) add desired amount of cooked boba to bottom of glass. pour white smoothie into a glass. spoon the berry layer off to one side and fill the rest in with the white smoothie. add a straw!
