one of the amazing things i have learned is to slice carrots thin the long way with a veggie peeler (or mandolin). this creates beautiful, curly pieces...sprinkle with your favorite sea salt and ta da! you'll have a new way to serve a common vegetable. *tip* pick them up with your hands to eat as a snack or serve as a side dish.
shaved carrots & dragon radishes
4 yellow carrots
4 dragon radishes
pink himalayan sea salt
1) wash all veggies. trim greens off carrots & radishes, leaving a small green stub behind.
2) using a peeler or mandolin, shave carrots & radishes lengthwise.
3) chill veggies in an ice water bath for 10 min.
4) drain well, plate and sprinkle with salt.
